You’ll stop for morning tea and homemade apple pie at Bilpin, visit Govetts Leap where the Bridal Veil Falls tumble over the sandstone cliffs, and take several short walks to enjoy the stunning views over the Blue Mountains valleys.

Next, depending on your selection, stop for lunch in Katoomba at either Echoes Restaurant or the Katoomba Golf Club (see the itinerary section below for more info). Enjoy a delicious meal and take in more of those Blue Mountains views.

After lunch, your private tour continues to Waradah Aboriginal Cultural Centre, where you’ll witness a traditional corroboree ceremony, browse the art and artifacts shop and perhaps try rock-art painting with ochre on the center’s painting wall.

You also have the option of heading to other lookouts to take in more Blue Mountains views, or visiting Scenic World (additional expense), home to the world’s steepest incline railway. From there you can enjoy uninterrupted views of the Three Sisters rock formations and take a walk through the rainforest. Then relax on the return trip to Sydney, arriving back at your hotel at around 4:30pm.

Damper is bread made in the stockman’s fire; to make billy tea, the pot is swung around at arm’s length so the tea leaves settle on the bottom prior to drinking.

Enjoy your morning tea of freshly made damper with butter and golden syrup as you learn about the history of Tobruk and the life of a stockman.

Watch an amazing ‘Stockman’s Roundup’ demonstration. This is a rare opportunity to see the riding ability of the stockman in action, and to appreciate the understanding and partnership he has with his sheepdog. Herding in excess of 50 sheep, the stockman will drive the sheep from the open field into the small paddock area.

While watching Tobruk’s unique sheep-shearing demonstration, some of the audience will have the opportunity to join in and give it a try themselves. With the shearer to guide you, you will learn the history of sheep shearing and gain a better understanding of how wool is derived from the coat of a sheep.

For lunch, this Outback Experience offers a world-famous Aussie BBQ. With a vast range of different dishes to choose from, from succulent T-Bone steaks to spicy sausages, you’ll wish you left room after your damper and billy tea.

After lunch, try your hand at boomerang throwing and whip cracking.
